Meet Chef Dillon
Favorite Cooking Memory:
When I was growing up my grandmother would make thanksgiving dinner and only let me do a little chopping or stirring. This particular memory my grandmother sat me down to teach me one of my family’s favorite recipes, Pierogies. Peirogies are savory stuffed dough consisting of cheese and potatoes. Peirogies have been a tradition in my family for 2 generations. I spent the day listening to my grandmother, Virginia Lynn, tell stories of the past while teaching me a dish I’ll make countless times for family and friends.
Q: What type of cooking most inspires you?
A: I am currently inspired by American southern cuisine, specifically Mississippi and Louisiana.
The two chefs that keep me interested are Chef Donald Link from New Orleans and John Currence from oxford Mississippi.
Q: What is your favorite ingredient to cook with?
A: My favorite ingredient to cook with would be garlic. I love garlic. Pickled garlic is my personal favorite.
